Observation (CORRECTED DURING INSPECTION):
Low temperature dishwasher not sanitizing with adequate level of chlorine. Chlorine residual detected after multiple cycles was still 0 ppm. Operator primed dishwasher and chlorine residual was finally detected at 50 ppm.
Corrective Action(s):
Start a daily dishwasher log to check concentration of chlorine residual. Ensure adequate supply of chlorine test strips are available.

2. Place scoops/ladles for hot-held rice in ice water. To be corrected immediately.
