-Handsinks are fully equipped .
- 200 ppm bleach available in a spray bottle and a bin.
-Sushi rice has pH of approx. 4.0
-Salmon for sushi is purchased fresh from Century 21 and then operator freezes it in the chest freezer for 7 days before use. Label the boxes so you know what date you can use the fish. They MUST be frozen at -20 degC for at least 7 days.
