Observation: - Rat droppings noted (minimal amount) noted under shelving in storage area and back storage area.
Corrective Action(s): - Operator cleaned up droppings at time of the inspection. Use bleach solution to disinfect areas.
- Traps present. Continue to monitor for further activity, cleaning up any additional droppings immediatley when noted. Cleaning up droppings is critical to determine if activity is current or from previous issues and it helps to prevent additional rodents from being attracted to the area.
- Ensure premises is maintained in a sanitary, uncluttered condition. Floors should be kept clear to facilitate cleaning and monitoring
- Pest Control will need to be contracted if issues persist

Observation (CORRECTED DURING INSPECTION): - Rodenticide noted in plastic container under shelving in back storage area. This is unacceptable in a food premises. Additionally, product was not stored or labelled properly
Corrective Action(s): - Operator discarded product at the time of the inspection. Do not use rodenticide inside the food premises. This can pose a food contamination risk. Use traps only.

Observation: - Personal items including food stored among items for the business.
Corrective Action(s): - Remove any items that are not required for the business. Designate one area for personal items (food etc). This has been a repeat issue and needs to be addressed. [Correction date: 4-Dec-2019]

- Operator produces 3 varieties of kimchi: Original, Radish, White.
- Handsink supplied with hot and cold running water, liquid soap and paper towel
- Bleach present for sanitizing food contact surfaces and utensils/equipment.
- Large containers/tubs with brine appear clean
- Walk-in cooler (vegetables) 1C
- Walk-in cooler (kimchi) 1C
- Reviewed production procedures at time of the inspection with Operators.
- Outer layer of produce removed prior to soaking in brine,
- Refractometer used to verify salt content of brine,
- Product transferred to cooler within 24 hours.
- Food safety procedures have been submitted and will be reviewed to determine if revisions are needed.
- Operator has pH meter; however, pH not currently being monitored. One container of White kimchi checked at time of the inspection and pH of liquid was measured to be 4.0.
