Observation (CORRECTED DURING INSPECTION):
The hand washing sink beside the dishwasher had no paper towels. Staff are unable to wash and dry their hand correctly.
Corrective Action(s):
Immediately place paper towels at the hand washing sink. During the inspection, staff placed paper towels at the hand sink.

Observation:
There is accumulated dust on the upper walls behind the metal storage rack, on the back kitchen wall. Dust could fall into food and contaminate it.
Corrective Action(s):
Wash the wall to remove the dust. Ensure this is done on a regular basis.

Observation:
The freezer by the oven has plastic covering the door handles and one of the doors. Plastic is not cleanable and will attract pests when food debris accumulates on it.
Corrective Action(s):
Remove and peel off the plastic covering on the door handles and door.

Observation:
The hand washing sink beside the dishwasher has no barrier that will stop dirty water from splashing on clean dishes. The clean dishes could become contaminated.
Corrective Action(s):
Install a stainless steel barrier between the hand sink and the clean drainboard of the dishwasher.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -17C or colder; hot holding above 60C and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 75.8C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles had a strength of 200ppm.
- Foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins stored below RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- Exhaust hood was recently professionally cleaned and the next cleaning is due in September 2022.
- Grease trap was professionally serviced in February 2022. Odors emanating from the grease trap. Next time the service company arrives, mention this and ensure the seals on the grease trap are in good working order, and the service company replaces the lid on correctly to seal the odors in.
- No signs of pests.
- FoodSafe certified staff present (owner and head chef possesses it).
ACTIONS TO TAKE:
Quats solution in spray bottles shall be discarded every 2nd day, as the strength has decreased to a level that is will not kill pathogens.
Place all wiping cloths in a bucket of Quats sanitizer solution, when not in use. The solution shall be changed with new solution every 2-4 hours.
