Observation (CORRECTED DURING INSPECTION): "Raid" spray is used in the kitchen at the end of the night to control for flies. Label states keep food and utensils covered.
Corrective Action(s): Discontinue the use of Raid spray in the kitchen. Raid may leave a residue, which can potentially contaminate equipment, utensils, or food. If pests are an issue, contact a professional pest control operator.

Observation: Green and while mould was found growing on the shelving units in the walk-in cooler.
Corrective Action(s): Ensure equipment is washed and sanitized on a regular basis and all equipment is maintained in a sanitary condition.

Comments

-Walk-in cooler was at 3C.
-Prep cooler was between 3C to 4C (top and bottom). Door seals for the prep cooler have been repaired.
-Front cooler unit (sauce) was at 4C.
-Single door upright freezer was at -18C.
-Three door upright freezer was at -13C.
-Temperatures checked and recorded twice daily.
-Pizza stored at ambient temperature time tracked on the white board. After two hours, pizza is discarded.
-Fresh bites stored on top of the display case was covered and protected from potential customer contamination. Frosting used in the fresh bites states it has a shelf life of 5 days at ambient temperature.
-Cleaning and sanitizing carried out in 3-compartment sink. Sink plugs available.
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray labelled and tested at 200-400ppm.
-Wax paper is placed between pizza and wooden serving boards. Serving board is then washed and sanitized in the 3-compartment sink.
-General food storage practices good at the time of inspection. Foods properly stored off the floor, covered, and protected from potential contamination.
-General sanitation good at the time of inspection.
-No signs of pest infestation noted at the time of inspection.
-Staff member FoodSafe Level 1 valid until February 24, 2023.
