Observation: Dishwasher was turned off/not in use at the time of the inspection. Manager and staff reported it is not working. All dishes are being manually washed. Large quantity of dirty dishes noted at the time of the inspection and dishes were full with dishes to be washed.
Corrective Action(s): Repair dishwasher so that it is in good working order. Dishwasher is needed to provide additional dishwashing capacity. Correction date: Aug. 25/17

Comments

-General sanitation of food preparation, service and storage areas was satisfactory.
-Handwashing sinks supplied with liquid soap and paper towels. Observed frequent handwashing by staff.
-Walk-in cooler was at 2C Upright meat cooler was 0C. Vegetable cooler was 4C
-Small under counter cooler was 4C
-Hot holding of food items was >60C with the exception of black beans which were 59C. Manager took action according to food safety procedures.
-Quats sanitizer (200ppm) available from dispenser at dishwashing sink. Staff are knowledgeable about manual dishwashing procedures.
*Ensure food contact surfaces are in good condition and capable of being washed and sanitized. One cutting board which was very worn (deep grooves) was discarded by Manager at the time of the inspection. Ensure cutting boards are regularly checked and replaced if they are no longer in good condition and not capable of being properly cleaned and sanitized.
-No signs of pest activity noted at the time of the inspection.
