Observation (CORRECTED DURING INSPECTION): No sanitizer in the dishwasher. Inside of the dishwasher is dirty.
Corrective Action(s): Problem with the sanitizer feed was resolved during the inspection and sanitizer was detected. Check with test strips daily. Clean the inside of dishwasher frequently.

Observation: The water supply to the kitchen handsink was shut off at the bottom. No paper towel.
Corrective Action(s): Repair the leak and restore water supply. Paper towel dispenser has been replenished.

Observation: Droppings noted throughout the premises. Kitchen surfaces are dirty. Staff washroom is dirty.
Corrective Action(s): Thoroughly clean all kitchen surfaces to remove spills, splatters and debris. Remove items from the floor and the shelves and clean all around. Clean behind equipment including the dough mixer. Clean all surfaces in the washroom.

Comments

Temperatures of the fridges are satisfactory. Most items are stored in containers with lids. Ensure lids are on all open containers.
Temperature of the foods in the steam table was marginal. Ensure that it is at least 140F/60C or above.
Ensure all food contact surfaces are bleached in the morning before food preparation begins.
