Observation (CORRECTED DURING INSPECTION):
Cheese found in the cooler, in the retail area, was 7C. Perishable items are required to be stored 4C or colder to prevent the growth of bacteria.
Corrective Action(s):
Relocate the cheese into a working cooler (4C or colder) and do not store in the current retail display cooler until it can maintain 4C or colder at all times. During the inspection, the cheese was relocated into a working cooler.

Observation:
The cooler, in the retail store, was 7C at the time of the inspection. The cooler requires to be 4C or colder to store perishable items (cheeses, meats, eggs, dairy, etc.). This violation was mentioned in the previous inspections. Perishable items will be discarded if found to be above 4C.
Corrective Action(s):
Replace or repair the cooler so that it can maintain 4C or colder at all times, and place a thermometer in the cooler to monitor the temperature. Until the cooler is replaced or repaired, do NOT store any perishable items in the cooler.

Comments

A routine inspection was conducted, the following observations were made:
- Walk-in-cooler was 2C; walk-in-freezer was -25C; and thermometers present.
- All foods stored on pallets or on wire racks.
- Foods stored in groups to prevent cross contamination.
- General sanitation is good. Dry sweep done daily.
- No signs of pest. Bi-weekly visits by Abell Pest Company done to monitor for pests.
- No expired foods for sale.
