Observation: -Dust accumulation noted on baking trays stored on rack in back area.
-Clean knives stored on visibly dirty pan in dishwashing area.
Corrective Action(s): -Re-wash and sanitize items noted above. Store clean dishes in a clean location. Correction date: today

Observation: -Dust and debris noted on hard to reach areas of the floor (in corners, under shelving, behind oven). Back area is cluttered with items that may no longer be needed for food premises and miscellaneous items stored on the floor.
-Soiled saran wrap affixed to side of cooler. Using saran wrap to protect a surface is not a replacement for cleaning.
Corrective Action(s): -Remove all items from the floor to facilitate cleaning and throughly clean the floor paying particular attention to the areas noted above.
-Remove soiled saran wrap and clean side of cooler to remove grease. Correction date: Aug. 3/17

Observation (CORRECTED DURING INSPECTION): -Heavily soiled aluminum foil trays present and being used repeatedly for pretzel bites.
-Cardboard wrapped in saran wrap being used repeatedly to put cookies cakes on after baking.
Corrective Action(s): -Use food contact surfaces, equipment that is durable and capable of being washed and sanitized and of suitable design/material. Items were discarded at the time of the inspection.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation (CORRECTED DURING INSPECTION): At beginning of the inspection, only one staff member on duty. Staff member has not completed Foodsafe level 1. Manager arrived part way through the inspection.
Corrective Action(s): Ensure their is always one person on duty who has completed Foodsafe level 1.

Comments

-Handsink supplied with liquid soap and paper towel
-All coolers 4C or colder. Front pop cooler was replaced since previous routine inspection
-Walk-in freezer was at -12C
-Hot holding of nacho cheese was 63C. Thermometer present for monitoring hot holding unit temperature
-Bleach present for sanitizing dishes. Test strips present for monitoring sanitizer concentration. Staff on duty and Manager knowledgeable about manual dishwashing procedures. Sign provided to be posted at 3-compartment sink.
->100ppm Chlorine sanitizer solution present in spray bottle for use on food contact surfaces.
-No signs of pests present at the time of the inspection. Adhesive traps and catch traps noted for monitoring.
