Observation: 2 x mop buckets were observed with dirty standing water in them that can harbour flies.
Corrective Action(s): Please discard dirty water right after mopping/cleaning.

Comments

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Coolers including walk in cooler and undercounter coolers recorded at or below 4C
- Freezers at or below -18C
- Hot holding units at or above 60C
- Small containers with gravy and mashed potatoes stored at room temperature and time tracked. Left over containers are discarded after 30 minutes.
- Small containers with boiled eggs stored on ice. Temperature recorded at 3C and time tracking stickers posted and boiled eggs are discarded after 4 hours.
- Temperature logs were maintained and found up-to-date. Good.

Storage:
- All food items were stored at least 6" off the floor.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations (x3) were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pails available throughout the facility and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- High temp mechanical dishwasher reached 76C on plate level during rinse cycle.
- Utensils, tongs and ice machine found in good sanitary condition.
- Food handling practices were found satisfactory.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Staff has valid FoodSafe Level 1 certificate (Exp 17/06/2027).

Note: In walk-in cooler, multiple plastic crates containing opened bags of frozen raw chicken were stacked on top of one another with one waste container underneath to collect blood and raw juices coming out of all the bags during thawing process. There is a concern that if there is contaminated blood and/or raw juices in one crate, it may contaminate chicken stored in open bags underneath as it passes down to waste container.
