301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Deli slicer was last used 2 days ago and was found to have meat behind the blade cover, on the blade arm, and under the sharpening guard.
Corrective Action(s): Deli slicer must be properly disassembled for cleaning and sanitizing after each use. Slicer was cleaned and sanitized at the time of inspection.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 3-compartment sink was not set-up for use at the time of inspection.
Corrective Action(s): When in operation, 3-compartment sink must be set up with a sanitizing solution to properly sanitize equipment and utensils (bleach at 100ppm to 200ppm or Quats ammonia). When facility opens at 4pm, staff are to have bleach sanitizer prepared and ready for use. 100ppm bleach sanitizing solution was prepared at the time of inspection.

Comments

-Walk-in cooler was at 3C.
-Pizza prep cooler was 4C (top) and 3C (bottom).
-Chest freezer was at -17C.
-Bleach sanitizing spray bottle in the front area was properly labelled and tested at 200ppm.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Washroom clean and well supplied.
-Foods generally stored off the floor, covered, and protected from potential contamination (a box of green peppers was placed on the floor of the walk-in cooler by the delivery person during the time of inspection).
-Scoops stored in a sanitary manner - handles were stored to prevent potential contamination of ingredients.
-Canned items were in good condition.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
*Operator FoodSafe Level 1 certificate issued July 23, 2000. Certificates issued prior to July 29, 2013 expire on July 29, 2018. In order to recertify, students must successfully complete a FoodSafe Level 1 or online refresher course (foodsafe.ca).
