Observation: Detailed cleaning of wire shelving racks, and legs of racks and tables, and wheels on trollies required. Accumulated grease observed on these surfaces. Ensure soup, hot water and a scrub pad are used to clean. Soap will remove grease.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Observed surfaces being covered with saran wrap, aluminum foil and newspaper. These items do not meet health standards and should not be used. Operator has been approved to use these items to cover surfaces only if they change them everyday and wash the surfaces prior to recovering. However, if sanitation levels or pest issues are a problem, then discontinue covering surfaces.

Observation: Walls, countertops, shelves and floor tiles are damaged, cracked, unsealed or not level. Repair, replace and/or reseal all surfaces so they are smooth, level, cleanable, sealed, water proof, durable adn of light color.
