Observation: 10 door prep line cooler - food debris on drawer sliding mechanisms.

Storage shelf above dishwashing 2 compartment sinks - mouse droppings on shelf and within tinfoil cup storage container.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.

Potentially hazardous foods not observed to be stored at room temperature. All ramen sauce mixes located in prep cooler.

Kitchen stock burners on, soup mixes 62 C, 84 C

Rags used with and stored in 100 ppm chlorine sanitizer solutions.

Opened tinfoil cups stored with janitorial gloves and mouse droppings found in storage bin - all opened single-use items discarded, storage bin cracked / chipped discarded.

Cutting boards and cooking pans no longer stored on grease trap or in damaged cabinet below handsink.

Ramen handsink is fully accessible.

Walk-in cooler and walk-in freezer re-organized, food items stored off the floor and raw meats stored away and below ready to eat food items.

Required premise cleaning conducted. Ensure premise cleaning is conducted daily to maintain premise sanitation and discourage pest activity.

Damaged trays have been discarded.

Kitchen lighting - light bulbs have been replaced, but fixtures are causing new lights to flicker. Fixtures to be repaired / replaced during premise renovation.
