*Provide update on the status to replace the missing operating permit upon my follow up inspection on April 16.
*Condiment cooler was running at 7 to 8c. Morning records and previous show the temperatures have been fine. Unit may be on a defrost cycle. Check in 1 hour to verify the temperature has returned to between 0 and 4c.
