Observation: Ponding water on lids of tubs stored under the drainboard of the dishwashing sink, numerous small flies in area.
Corrective Action(s): Area to be cleaned up, dried up, and an integrated pest management plan implemented.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Grease and food accumulations at back of both deep fryers, under and behind equipment on both sides of the kitchen (cook line and plating line) including the under side of tables, equipment and shelving.
Food accumulations under shelving in dry storage area.
Mould on door seals and door face of beer cooler in bar area, door seal for cooler under till area is damaged and needs repair/replacement.
Ponding water on containers stored under dishwashing drainboards, numerous fruit flies in the area.
Food splatters in both microwave ovens.
Etc.
Corrective Action(s): Premises needs a thorough general cleaning of kitchen, dry storage area and dishwashing area. Cleaning to include, but not limited to:
- Inside, behind and under all equipment on the cook line and plating line (including the under-side of tables, shelves and equipment.
- Door seals of bar coolers, both clean, sanitize and repair.
- Clean floor and storage tubs under dishwasher drainboard.
