Observation (CORRECTED DURING INSPECTION): 1. Discussed manual dishwashing procedures with operator. Dishes are washed at the end of the night -- wash in soap, rinse in water and soak in sanitizer overnight. Staff will drain sanitizer the next day and use dishes.
2. Operator has been using "Lysol" and/or "Greenworks" as sanitizer.
Corrective Action(s): Proper manual dishwashing procedures must be followed: a) Wash in hot soapy water; b) Rinse in hot clean water; c) Soak in sanitizer for 2 minutes); d) Air Dry (very important).
In addition, ensure bubble tea shaker cups, spoons, and blender are all sanitized every 4 hours.
2. Mix bleach and water in spray bottle to use as sanitizer for ALL food contact surfaces. Operator made a sanitizer bottle at time of inspection; at least 100ppm chlorine noted.
