Observation (CORRECTED DURING INSPECTION): 1) Bleach sanitizer was too strong - the test strip was whited out when tested. Operator mentioned using 50-50 ratio for bleach to water.
2) Water tray in the ice-machine had some build up of grime in the edges. Operator mentioned that the machine is cleaned every 6 months.
Corrective Action(s): 1) Operator made 200 ppm bleach solution at the time of inpsection. 5 mL of bleach per 1 L of water is required. Wipe down all counters with the new sanitizer solution immediately.
2) Wash and sanitize the water tray every month to prevent build up of grime. Maintain a schedule. Date to be corrected by: September 2, 2022.

Routine inspection conducted. Facility is in good sanitary condition.

Temperatures:
Preparation cooler is holding pearls at 4 degrees Celsius or below.
Chest freezers are holding ice-cream and cream puffs at -18 degrees Celsius or below.
Hot holding units not in use at the time of inspection.
NOTE: it is recommended that temperature logs be maintained to document temperatures of all cooling units routinely.

Hand sink is equipped with hot and cold running water, liquid soap, and disposable paper towels.
