Observation (CORRECTED DURING INSPECTION): Manual vegetable slicer and shredder were found to have food debris on them after cleaning and sanitizing.
Corrective Action(s): Ensure staff properly disassemble, soak, and clean and sanitize all equipment properly to prevent potential cross contamination. Equipment was washed and sanitized at the time of inspection.

Observation: 1) Walk-in cooler shelving units were found to have mould growth.
2) A few rodent droppings were observed in the storage area.
Corrective Action(s): 1) Clean shelving units and ensure shelving units are cleaned on a regular basis to prevent mould growth.
2) Clean and sanitize all areas affected by rodent droppings. Monitor for activity and contact your pest control operator as needed.

Observation: Shelving unit was lined with cardboard.
Corrective Action(s): Discontinue the practice of using cardboard to line surfaces. All surfaces must be smooth, non-absorbent, and easily cleanable.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation (CORRECTED DURING INSPECTION): Operator was not present at the time of inspection.
Corrective Action(s): In the absence of the operator, at least one staff member on the premises must have FOODSAFE Level 1 or equivalent training. Additional staff must be trained in FOODSAFE Level 1 or equivalent or staff must be scheduled accordingly. Operator will arrived on-site at the time of inspection and stated he would register additional staff for FOODSAFE Level 1 or equivalent training.

Comments

-Walk-in cooler was at 3C.
-Pizza cooler was at 2C (top) and 3C (bottom).
-No dipping sauces labelled "Keep Refrigerated" stored at room temperature at the time of inspection.
-Cleaning and sanitizing carried out in the 3-compartment sink. Quats sanitizer dispenser was at 200ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Paper towel dispenser by the pizza prep cooler may need to be replaced.
-Quats sanitizer spray bottle was labelled and tested at 200ppm.
-General food storage practices good at the time of inspection. Foods stored off the floor and protected from potential contamination.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
