Corrective Action(s): Once knives have been used they are to be immediately warwashed, not placed back into the holder. Ensure staff are properly trained. Rewash all knives in the kife rack as instructed

Observation: Many tray inserts as well as knives/utensils in all the "Cleaned areas" observed with food debris affixed.
Corrective Action(s): Ensure staff are trained on how to properly prerinse, prescrape untensils before they go through the dishwasher. Rewash all utensils/tray inserts/etc ie everything .

*Several flies noted. Fly control is required. This can be achieved with a UV system with sticky board.
*Dishwasher initially not turned on at start of inspection which took awhile to warm up. Once warmed up final rinse at 79c (At plate level).
Walk in cooler at <4c
Front hot holding at >60c
Quat sanitizer at 200ppm in containers.
