Observation (CORRECTED DURING INSPECTION): There was build up of dried food debris on multiple cake pans.
Corrective Action(s): Rewash and re sanitize the dirty cake pans.

Observation (CORRECTED DURING INSPECTION): There was no soap and paper towels at the back handwashing stations.
Corrective Action(s): The operator stocked the handwashing station with soap and paper towels. All handwashing stations must be stocked with cold/hot running water, soap, and paper towels at all times.

Observation: There was build up of dirt and grease on wire racks inside the walk in cooler.
Corrective Action(s): Thoroughly clean the wire racks as part of our monthly cleaning schedule.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) The ambient temperature of the walk in cooler was measured at 10C.
2) The ambient temperature of the display cooler adjacent to the wall was measured at 12C.
Corrective Action(s): Call for service. Fix the coolers and ensure they maintain temperature < or = 4C at all times.

Observation: Missing light covered in the lights directly above the prep table behind the walk in cooler.
Corrective Action(s): Install light covers in the area noted above.

Observation: There is no FOODSAFE certified staff on duty at the time of the inspection.
Corrective Action(s): One FOODSAFE certified staff must be on duty at all times. The operator stated that she will register for FOODSAFE course next week. Please submit your certificate once you successfully pass the course to the health inspector at derek.song@fraserhealth.ca.

Comments

- General sanitation needs improvement.
- All other handwashing stations stocked with cold/hot running water, soap, and paper towels.
- All other coolers (display) < or = 4C.
- All freezers (upright) < or = -18C
- The operator failed to provide temperature log. Begin a temperature log for all coolers and freezers and keep all records in the store for review by the health inspector. Template was provided to the operator.
- Three compartment sink available for manual dishwashing. Bleach available.
- Surface sanitizer was available in bucket with presoaked wipes at 100 ppm chlorine solution.
- Dry storage area is satisfactory.
- No signs of pest activity at the time of the inspection.
