Store:
All cooling units measured at or below 4C. Temperature monitoring log maintained via automatic monitoring and paper sheet.
Freezers measured at or below -18C.

Back room:
Food stored above floor.
Walk in coolers measured at or below 4C. Walk in freezer for pastry measured at -26C.
Meat cooler and produce cooler measured at 4 degree C or colder.

Meat department:
Hand washing station supplies with liquid soap and paper towels in dispenser.
QUAT Sanitizer available 200-400 ppm from sanitizer dispensers and in spray bottles. Noted a sanitizer hose dedicated to sanitizing meat processing room, tables and surfaces.
Cleaning and sanitizing meat equipment(Band saw, grinder, etc.) discussed.
Meat room is well lit.
2- comp sink maintained.

Fresh produce room
Hand washing available and maintained. Hand sink is to be used only for hand washing.
Cutting board replacements discussed.
Ice maker maintained. Ice scoop stored in sanitary condition.
Cooling cases measured at or below 4C. They maintained clean.

- Good stock rotation observed. FIFO maintained.
- High touch areas are to be sanitized frequently
- A new garbage management system implemented and the area noted well organized.
- No sign of pest activity observed at this date. Pest control managed by a professional company.
