Observation (CORRECTED DURING INSPECTION): A bowl of rice was being stored at room temperature. Temperature of rice was 27C.
A pot (half full) of masala (potato) was <60C and was being stored with heat turned off. Staff were unsure how long it had been at this temperature but reported it had been for greater than 2 hours. Both products were discarded by staff.
Corrective Action(s): Hot foods must be stored at 60C or higher. Obtain probe thermometer to verify the temperature. If this temperature requirement is not met, food must be discarded after 2 hours. Either use hot holding unit to keep foods at 60C or above or only heat as much as needed for the order.

Observation: Mouse droppings were noted on shelving where dry goods are stored in back prep room.
Corrective Action(s): Remove items from shelving and thoroughly clean shelving to remove droppings. Use bleach solution to sanitize shelving. Monitor area for any further activity. Correction date: August 9/16

Observation: Back prep sink is not working. Staff reported it is not draining properly and therefore it is not being used.
Corrective Action(s): Repair sink so that it is in good working order and available for use in the prep area. Correction date: Aug. 6/16

Comments

General sanitation of premises is satisfactory although some attention is needed to remove food splatter from the wall and ensure edges of the floor are being cleaned..
Hot and cold running water was available
Liquid soap and paper towel were present at kitchen sink, servery sink and in staff washroom
50ppm chlorine was detected in the final rinse of the dishwasher to sanitize dishes. Test strips are present for monitoring.
Quats sanitizer (200ppm) was present in spray bottle to sanitize food contact surfaces
Walk-in cooler was at 3C
Walk-in freezer was at -20C
Sliding door cooler and line cooler were 4C
Upright freezer was -9C
Soup was being hot held and was 64C
*Wall behind dishwashing sink is showing signs of wear and will need to repaired in the future. Walls must be kept in a washable condition. A more durable finish, such as tile may be more suitable and longer lasting in this area due to the spray/moisture generated from dishwashing.
