Observation (CORRECTED DURING INSPECTION): 3 buckets of veggie sauce/gravy in the walk-in cooler were measured to be between 34C and 40C.
Corrective Action(s): Cook stated they were placed in the walk-in cooler at around 8:30-9AM this morning. Food must be cooled in smaller portions and in shallow pans to ensure food cools from 60C to 20C within 2 hours and from 20C to 4C within 4 hours. Cook transferred the veggie gravy to shallow stainless steel pans at time of inspection.

Observation (CORRECTED DURING INSPECTION): Sweets stored in display cooler at front were at ~8C. Display cooler door was kept open.
Corrective Action(s): Ensure to close display cooler sliding doors to keep the cold air inside and the ambient temperature at or below 4C.

Observation (CORRECTED DURING INSPECTION): Several handwashing sinks were missing paper towels
Corrective Action(s): Operator refilled paper towel dispensers at time of inspection. Ensure to check all handwashing sinks for soap and paper towel supplies more frequently.

Comments

- Hand sinks were supplied with hot and cold running water and liquid soap. Hand sink at front was supplied with paper towels.
- Bleach sanitizer solution available at 100 ppm in kitchen and at front server area
- Low-temperature dishwasher's final rinse cycle had 50 ppm chlorine registered at plate surface level
- Coolers were at or below 4C
- Freezer temperatures satisfactory
- Invoices for yogurt and paneer were available for review on-site
- Food storage practices satisfactory. *Ensure all food items stored in coolers are covered with properly fitting lids. *Ensure scoops are not stored directly in dry ingredients, to prevent handles from contaminating ingredients.
- General sanitation satisfactory
- No signs of pest activity noted at time of inspection

*Note: Temperature logs for coolers were not kept on-site. Ensure daily temperature logs are kept on-site and available for review.
