Observation: Large cooking tools (i.e. pots/bowls) were washed without a proper sanitizing step at the end.
Corrective Action(s): Ensure to have all large cooking tools soaked in 200ppm chlorine solution in the 2 comp sink as agreed at this time. Follow the manual dishwashing poster.

- Handwashing station adequately supplied.
- Coolers operating at 4'C; Freezers operating at -18'C.
- Hot holding units operating above 60'C.
- 200ppm chlorine solution available in a labelled spray bottle.
- Food storage practice satisfactory.
- Professional pest control company contracted. Traps in place.

General sanitation requires improvement as mentioned above.
