Observation (CORRECTED DURING INSPECTION): Ingredients stored in the domestic cooler in the sushi bar were measured to be between 8 and 9C.
Corrective Action(s): Transfer potentially hazardous food to the walk-in cooler as the cooler dial was adjusted onsite from 3 to 6.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer was measured to be 10ppm in the bucket and several wet wiping clothes were stored on the counter in the sushi bar.
Corrective Action(s): Operator's wife changed bleach solution to 100ppm. Ensure that wet wiping clothes are stored in bleach sanitizer between uses.

Observation: Raw frozen chicken was observed to be stored in white garbage bags directly, in the chest freezer.
Corrective Action(s): Transfer food into food grade containers as garbage bags cannot be used to store food.

Observation: Rice spill under main food prep table in the back kitchen, some food debris under the cooking oven and oven handles were oily.
Corrective Action(s): Please clean and sanitize these areas by follow up.

Observation: Aluminum foil used to line the wall around the security panel and where mops were hung.
Corrective Action(s): Aluminum foil is not a washable, durable material. Please remove aluminum foil used to line walls and replace with metal splash boards around hooks for mops.

Observation: Domestic cooler in the sushi bar was measured at 9-10C.
Corrective Action(s): Operator adjusted temperature dial from 3 to 6 at time of inspection. If the temperature cannot be maintained at 4C or colder, repair or replace cooler.
