- Ice volume low in machine:
- ice is relied on heavily for cooling of areas like the salad bar, condiments and wraps. Best practices would be immersing the food inserts more in ice but the ice machine doesn't appear to supply enough ice to allow this, therefore ice rationing may be taking place.

- Fridges all holding foods at 4C or colder
- Freezers measured at -18C or colder
- Hot held soup at 60C or hotter
- Dishwasher measured 72.8 at plate
- Chlorine spray sanitizer at 100ppm and quat sanitizer at 200ppm
