-The mochi desserts were sent for sampling to see if they can be held at room temperature. Ensure that the results are sent to Fraser Health.
If they cannot be held at room temperature, there are two options:
1) They can be refrigerated.
2) They can be kept out for 2 hours maximum, with a permanent record sheet recording the time that it was brought out, the time that it was removed from sale and the number of each type that were discarded.

Corrected items:

Food in the dry storage area are kept off the floor. Recommend sealed, pest proof containers.
The right hand side of the 2-compartment sink is no longer leaking. The left hand side is still leaking, a plumber has been called.
The lights in the back that required covers were replaced with LED lights that do not require covers.
A thermometer was installed in the 2 door cooler.
