Observation: Storage in the kitchen and the dry storage area is cluttered and disorganized. Bags of ingredients are not protected from rodents contamination.
Corrective Action(s): Organize storage. Discard unused equipment. Food products that come in bags, sacks, and boxes need to be stored inside gnaw proofed storage units. Store items off the floor and away from walls.

A new reach-in cooler had replaced the unit that had temperature control problems.
Black garbage bags should not be in direct contact with moist food. Use food grade bags and food grade plastic wraps instead.
Take steps to protect food stuffs from being contaminated by rodents. Remove droppings and clean nightly.
