Observation (CORRECTED DURING INSPECTION): Hot water supply was not available at the front handwash sink. Operator turned ON the supply of hot water during the inspection. He mentioned that staff left tap running with hot water multiple times so he ended up turning it off from under the sink.
Corrective Action(s): Please ensure that all handwash sinks have adequate supply of hot and cold water, liquid soap and single use paper towels for proper handwashing.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings were observed in one corner of dry storage area along the wall. Operator stated that he will have it cleaned immediately and notify the pest control company.
Corrective Action(s): Please ensure that the facility is maintained in good sanitary condition and free of pests.
- Remove the rodent droppings from the above noted area and disinfect the area with 1 part bleach to 9 part water solution. Use proper personal protective equipment such as face mask, gloves during cleaning.
- Discuss the issue with your pest control company to have appropriate measures in place.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 2x chest freezers and 1 stand up freezer (#6) had thick build up of ice. This could affect the cold air circulation and ambient temperature of the freezers. Operator stated that the freezers are defrosted on monthly basis. Few freezers have been defrosted and his plan is to defrost the remaining freezers soon.
Corrective Action(s): Please ensure that all equipment are maintained in good working order at all times. Defrost/service the abovenoted freezers.

Comments

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler recorded at 2C
- Stand up & prep coolers recorded at or below 4C
- Freezers (stand up & chest) recorded below -18C
- No hot holding observed during the inspection.
- A large pot of soup was stored at room temperature & recorded at 58C. Operator stated that they just finished preparing the soup and cooling it down prior to cold storage. Operator is aware to follow cooling curve and mentioned that after 4 hours, the soup is transferred into small containers & moved to refrigeration units. Operator mentioned that they have ice wand in place & temperature checks are conducted. Multiple thermometers observed onsite.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers/freezers.

Sanitation & Maintenance:
- Hand wash station in the back was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Multiple sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- 3 compartment dishwashing sink and was used for pre-soaking utensils/dishes before putting them in dishwasher.
- 50ppm chlorine residual recorded during rinse cycle of low temp mechanical dishwasher. Chlorine test strips onsite.

Pest Management:
- Professional pest control company conducts routine checks.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate (Exp October 28, 2024)
