- Handsink well maintained with hot water, liquid soap and paper towel.
- Temperatures of all refrigeration units were adequate.
- Frequently check the temperature of the foods in the line cooler across from the stove. If the potentially hazardous foods are left at >4C for more than 2 hours, discard them.
- Sanitizer bottle had >100ppm chlorine.
- High temp sanitizer achieved 74C at final rinse cycle.
