Routine inspection:
-stand up freezer has been replaced, at -22C
-stand up cooler in kitchen at 1C, fan cover clean
-prep cooler at 4C
-some condiments and veggies that are used frequently are kept on ice
*high temperature dishwasher sanitizing at 82C internally, operator checks internal dishwasher temperature with probe thermometer as rinse gauge that was ordered does not fit machine - ensure to check each day of operation
-bleach spray bottle at 200ppm Cl
-soup hot held >60C
-hot dogs on roller thrown out if not sold
-left over broth soups are cooled in ice bath before storage in cooler and reheated the next day
-premise clean
-back door open but screen door closed, no signs of pests
