Observation: 1. Mouse droppings in back storage room.
2. Fruit flies in bar and dishwashing area.
Corrective Action(s): Clean up mouse droppings and sanitize the affected areas. Premise is serviced by a licensed pest control company once/per month for rodent control using mechanical traps. Mouse droppings were not found anywhere else.
Noticed numerous fruit flies in the bar and dishwashing area. Sticky traps are in use but are full of flies. Please ensure to keep the bar area as clean as possible and prevent standing water in the bar and dishwashing areas. Suggested to operator to consult with licensed pest control company to determine what else can be done to control and eliminate flies.

Comments

General observations:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Hot holding units were over 60 degrees Celsius.
Food storage practices are satisfactory.
Organization of storage areas is satisfactory.
Hand sinks are stocked with liquid soap and paper towels. Discussed with operator about using paper towels that fit properly in the existing paper towel dispensers or replace them with dispensers/holders that properly hold the paper towels.
Food handler hygiene is satisfactory.
Low temperature dishwasher had a chlorine sanitizer concentration of 100ppm after the final rinse cycle.

Notes:
Operator has replaced flooring in the food storage, preparation and dish wash areas. Hole in wall in back hallway has been repaired. Flooring for the back hallway by washrooms still needs to be replaced, as well as and the molding for the floor-wall junctions in the kitchen still need to be installed. Additionally, the exposed wall on either side of the walk-in cooler still need to be repaired. Operator has committed to complete the remaining work by November 8, 2017.
