Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. Soap was mixed in with sanitizer in one of the sanitizing pails. The pail did not contain any detectable quaternary ammonium compound (QUATS) residual.
2. Two other sanitizing pails in the kitchen had a concentration of approximately 100 ppm QUATS.
Correction: All sanitizing pails were emptied and replenished with 200 ppm QUATS at time of inspection. Do not mix soap with sanitizer. Ensure that you refill the sanitizing pails every 4 hours.

Kimchi Food Safety Plan:
As discussed, your critical control point will be observations of successful fermentation - for example presence of CO2
Your critical limit will be time - at which point does your pH go below 4.6
Your corrective action would be to discard as a failed ferment cannot be corrected
Going forward, please edit your FSP, and make above changes. Please also exclude raw shrimp, and include ingredient weights
pH meter has been purchased for use on site - please verify how you correctly monitor pH of products that are not uniform or transparent
Have a lab test your first batch of kimchi (x3 types) after 48hrs, as discussed.
