Observation: Had employee demonstrate sanitizing surface used 200ppm chlorine. Then dried with dirty rag. Must sanitize surfaces after use with chlorine bleach 100-200 ppm, then air dry

Observation: 1) Found vegetables under raw meats, must keep raw meat on bottom (date to be corrected by:Today)
2) Found open tin with Hoysin sauces in cooler, must place into re-useable container once it is open to prevent metal leaching
3) Found multiple dry good items (i.e. sugar, flour) without lids or improper lids or just in an opened package. Must place open bulk food into pest proof containers and keep lids in place
4) Found multiple items sitting on the floor. Must keep all food 6" or 15cm off the floor
Found cardboard used as a lid, use only food grade materials

Observation: Found heavy grease and food build up in all hard to reach areas (i.e under equipment/shelves, inside cupboards and coolers, walls behind sinks cookline and food prep areas) A deep clean of premises is required on all floors, surfaces, vents over works and handles
