Observation (CORRECTED DURING INSPECTION): Back of house sanitizer solution in spray bottle measured >200ppm chlorine.
Corrective Action(s): Solution was diluted at time of inspection, now measures 200ppm chlorine.

Observation: 1) Two opened cans stored in back prep cooler. Cans are covered with saran wrap, however leftover items remain in the original packaging.
2) One opened bag of flour in back storage closet was stored directly on the floor.
Corrective Action(s): 1) Transfer leftover items into a food grade container. Once a can is opened, it is no longer food grade.
2) All stored food items must be at least 15cm off the floor and sealed. Transfer contents into pest proof bins. If any contents remain, the original bag must not be open to the environment.

> Back of house sanitizer solution measured 200ppm chlorine.
**Test strips provided for short-term use. Recommend operator to purchase test strips for verifying sanitizer concentration.
