Observation: Three compartment sink set up with detergent but chemical sanitizer less than 200ppm
It was determined that the "chemical sanitizer" was actually dishwashing detergent.
Facility only has QUAT based testing strips available for use

Corrective Action(s): Cease use of this product as a chemical sanitizer and use either:
1) Chlorine sanitizer solution (made on site as EHO was present)
2) QUAT based sanitizer solution (one remaining jug was found stuffed in corner under prep sink)
Obtain Chlorine based sanitizer testing strips if Chlorine sanitizer is to be used

Observation: Some cleaning required in hard to reach areas.
This includes but is not limited to the following areas: Hood vent canopy exterior (only cleaned every 3 months - should be cleaned at least weekly), floor under grill, shelves, Storage areas require items up off floor.
Ensure personal effects are removed from lower shelves and stored on person or in designated staff storage areas.

Observation: Dishwasher is malfunctioning.

Corrective Action(s): Repair dishwasher IMMEDIATELY. This is essential to the operation of the business. The two compartment sink is set up as a temporary measure but is not to be used long term.
NOTE: if staff at any point fail to demonstrate ability to use 2 compartment sink for washing and sanitizing of dishes the facility will be Ordered Closed until such time as the dishwasher is repaired.
