Observation (CORRECTED DURING INSPECTION): Ice scoop observed to be cracked. Operator discard the ice scoop and replaced with a new one.

Observation: 1- Number of fruit flies observed at the time of inspection particularly in the bar.
2- Limited number of mice droppings observed under dishwasher and in dry storage. Live traps and sticky traps are placed throughout the premises.
Corrective Action(s): 1- Ensure to consult with your pest control company to find out best spot installing fly control lighting. Ensure all drinks and syrups are covered during night and no food left uncovered.

2- Clean and sanitize affected areas. Endure to monitor pest activity more frequent. Ensure to conduct cleaning and sanitizing along walls and under equipment.

Routine inspection
- Hand washing stations are supplied with liquid soap and paper towels. Proper hand washing and proper use of nitrile gloves discussed.
- Walk-in cooler measured at or below 4C. Upright coolers are at or below 4C. Under counter vegetable coolers measured at or below 4C.
- Upright freezers measured at or below -18C.
- Rice in hot holding units measured at or above 60C.
- Chlorine 100 ppm detected in Dishwasher final rinse water. Test strips noted.
- Sanitizer available in spray bottles.
- Ice makers observed to be clean and maintained. Ice scoop stored properly.
- Cutting board cleaning, sanitation was discussed.

Reminder: Items that are not needed for food operation are to be removed from the premises. Free up space on SS counters in order to place cutting board while cutting vegetables.
Clean and organize shelve near staff washroom. A new clothing rack could be used so that staff keep their belongings in one place and away from food.
