Comments

- Premises and equipment maintained in sanitary condition. An improvement in level of sanitation is noted since previous routine inspection.
- Handwashing sink in food preparation area was supplied with liquid soap and paper towel
- Washrooms available for use by public/staff were supplied with liquid soap and paper towel
- Coolers were maintaining products at 4C or colder:
- Single door reach in cooler was 4C.
- Prep table cooler 4C
- Countertop display cooler 3C
- Time tracking in place for pearls stored at room temperature. Operator knowledgeable about time for pearls to be discarded.
- Food products and supplies stored on shelving off of the floor.
- Ice machine and ice bin appear clean. Ice scoops stored in sanitary manner.
- In use wiping cloths kept in sanitizer solution - 200ppm chlorine
- Sink stoppers present for 3 compartment sink and signs posted for manual dishwashing. Chlorine bleach (diluted) used for sanitizing step. Chlorine test strips present to check concentration.
- No pest activity noted at time of the inspection.
- Foodsafe requirement met at the time of the inspection. Operator present and has completed Foodsafe level 1. Additional staff have also completed Foodsafe level 1. Certificates present.

Update/refresh was completed for premises as required by franchise which included:
- wall and floor finishes within customer seating area and food preparation/storage area. Finish of floors and walls is smooth and washable.
- extending service counter by approx. 30cm to allow for additonal space in food preparation/service area
- addition of prep table cooler for toppings (previously stored on ice) and addition of countertop display cooler for macarons.
- extension of back food preparation area by approx. 1m to allow for additional prep tables adjacent to single door reach in cooler. Prep tables used for preparation of pearls. Handwashing sink accessible to this area.
*While there were no food safety or sanitation issues observed at the time of the inspection, the above update/alterations were completed without plans being submitted and prior approval being received. See violation above for action required.
