Observation (CORRECTED DURING INSPECTION): Back handwash station did not have single use paper towels and cleaning supplies were stored in the hand basin.
Corrective Action(s): Ensure handwash stations are accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Single use paper towels were replaced and the hand basin was cleared at the time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation: Bleach was too strong. Bleach sanitizer spray bottle was yellow in colour and bleached out the test strip.
Corrective Action(s): Bleach sanitizer must be maintained between 100ppm to 200ppm. Excess concentrations of bleach are not considered food grade and may be toxic for health. To prepare 100ppm to 200ppm bleach, add 1/2 teaspoon bleach per litre of water.

Observation: Rodent droppings were found in the back kitchen (along the wall behind the plastic totes).
Corrective Action(s): Facility must be maintained in a condition free of pests. Clean and sanitize all areas affected with rodent droppings and monitor for pest activity. Contact pest control services as needed.

Observation: One bleach spray bottle was unlabelled and the other spray bottle was labelled all purpose cleaner.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing and/or misuse of chemicals. Check labels regularly and relabel as needed.

Observation: Staff member FOODSAFE Level 1 expired in March of 2023.
Corrective Action(s): In the absence of the operator, at least one staff member in the facility must have FOODSAFE Level 1 or equivalent training.

Comments

-Prep cooler was at 4C (top and bottom). Water was found pooling at the bottom of the cooler unit - monitor cooler to ensure it can maintain proper cold holding temperatures and contact service as needed.
-Back double door cooler was at 4C.
-Back single door cooler was at 4C.
-Front beverage cooler (dairy) was at 4C.
-Single door cooler in the customer area was at 2C.
-Upright freezer was at -19C.
-Hot holding was greater than 60C (rice and meats). Staff stated meat is reheated to greater than 74C on the grill prior to hot holding.
-Donair meat undergoes a secondary cook step on the grill.
-Staff stated there is no leftover frozen donair meat at the end of the day. Frozen cones are used fresh daily.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach and sink plugs available.
-Raw meats stored separately from ready-to-eat foods.
-Foods by the cash register protected from potential contamination.
-Washroom clean and sanitary. Handwash station equipped with liquid hand soap and single use paper towels.
