308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The walk-in-freezer door has accumulated ice around the door seal/gasket, and ice is accumulated on the floor of the freezer too. Cold air is escaping from the freezer door and condensating on surfaces and freezing. This door is not closing tightly, the door seal/gasket appears damaged. Power usage increases as the condenser is working all the time, and the ice on the freezer floor is a slipping hazard to staff. This violation is REPEATED from the previous inspection reports.
2) Cracked, broken, melted, and damaged plastic food inserts and lids, and a metal strainer was found damaged. Pieces of plastic or metal could fall into food, and the bacteria will live in the cracks.
Corrective Action(s):
1) Repair or replace the damaged door seal/gasket, if you are unable to source the parts, you may require to replace the whole door. The door and seal must tightly close to prevent air from escaping.
**Correction date: June 1/19** FAILURE to correct the issue, will result in the ISSUANCE of ORDERS, TICKETS, and/or FINES.
2) Discard all damaged equipment, utensils, and food inserts, and purchase new ones. Regularily inspect all items for damage and replace accordingly.

Observation:
Broken floor tiles found infront and beneath the deep fryers, and tiles have fallen off the wall across from the ice machine. The floor and walls are no longer sealed and are not cleanable.
Corrective Action(s):
Replace the floor tile and wall tiles with new ones, and seal. The surfaces shall be durable, smooth, level, sealed, and cleanable. Inspect the whole kitchen area on a regular basis for missing or damaged surfaces (walls, floors, coutertops, ceiling, etc.).

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -21C; hot holding units 60C or hotter; thermometers present; and temperatures recorded daily.
- Low temperature dishwasher had [Cl2] of 50ppm.
- Glasswasher had [I2] of 12.5ppm.
- Quats sanitizer in cloth buckets was 200ppm.
- Bleach sanitizer in spray bottles was above 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Food storage practices improved. All foods stored in food grade containers; covered; labeled; date coded; store in groups with proteins separate from other foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods found in use. FIFO rules being followed.
- General sanitation level has improved, especially the hard to reach areas. Detailed cleaning is being done on a regular basis. Good job.
- Ensure staff are using soap & hot water to remove food and grease, as sanitizer is NOT a degreaser, it only kills germs/bacteria. The use of hot water and soap to clean shall be done every night to remove all food, grease, sugar, alcohol, etc. from all surfaces.
- No signs of pests. Drain flies are actively being addressed with cleaning every night and treatment of floor drains.
- FoodSafe certified staff present.
