Observation (CORRECTED DURING INSPECTION): Beef dish stored in the front hot holding unit registered an internal temperature of 57 deg C. Beef dish was stored in hot holding unit <2 hours ago.
Corrective Action(s): - Operator removed the beef dish from the hot holding unit and placed it in walk-in cooler.
- Operator indicated that they will bring down the internal temperature to <= 4 deg C by using adequate cooling procedures.

Observation (CORRECTED DURING INSPECTION): Minor mold build-up observed on the back panel inside the ice machine
Corrective Action(s): - Staff removed all ice in the ice machine.
- Then staff had thoroughly cleaned and sanitized the inside of the ice machine, focusing on the above mentioned location
