Observation (CORRECTED DURING INSPECTION): Low-temperature dishwasher measured at 0 ppm chlorine concentration with test strip. Staff replaced sanitizer bottle during inspection. Sanitizer was measured at 100 ppm chlorine concentration at the plate surface.
Corrective Action(s): Clean and sanitize all dishes and equipment using the dishwasher. Maintain a dishwasher log to ensure staff are verifying sanitizer strength at least once daily. Use the 2-compartment sink method to clean and sanitize dishes if the dishwasher is not functioning.

Observation: [REPEAT VIOLATION] Few ants observed in the kitfchen next to the door leading to the washroom hallway. No evidence of pest control company contract on site.
Corrective Action(s): Monitor ant population on site and contact pest control company if ants increase in number to assess and apply treatment as necessary. Maintain the premise in a sanitary condition to prevent pest entry/habourage/breeding on site.

Observation (CORRECTED DURING INSPECTION): Low-temperature chemical dishwasher measured at 0 ppm chlorine concentration during inspection. Sanitizer bottle observed empty. Staff replaced sanitizer bucket during inspection and dishwasher measured at 100 ppm chlorine with test strip.
Corrective Action(s): Ensure the dishwasher is in good working order by verifying sanitizer strength with available chlorine test strips daily (or as per approved sanitation plan). If dishwasher is not functioning or if sanitizer requires replacement, do so immediately to ensure food contact surfaces and equipment are sanitized adequately between uses.

Observation: No light observed available in the dry storage room. Staff stated that there are plans to replace the lights.
Corrective Action(s): Ensure all areas of the kitchen and where there is food storage are adequately lit to facilitate proper cleaning and to maintain the premise as per approved plans.

Observations:

- All freezers at or below -19'C
- All hot-holding units at or above 60'C
- General sanitation good (With exception of violations)
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- Bleach sanitizer in labelled spray bottles measured at 200 ppm chlorine concentration with test strip
- Chlorine test strips are available on site
- Ice machine observed in good sanitary condition
- All food observed stored covered and at least 6 inches off the floor
- First-in-first-out method in use. Food items are observed labelled.

- Temperature logs are not maintained on site. Ensure to keep temperature logs as per approved plans.
- Dishwasher log is not maintained on site. Ensure to maintain a dishwasher log as per approved plans.
