Operator did not have bleach on site for manual sanitizing. Operator purchasing bleach during inspection. Will wash dishes in dishwasher and sanitize in sink with bleach and water (one ounce bleach to one gallon water)

Hand sink equipped with soap and paper towel

-Ensure line/prep cooler lid is kept closed when not busy to prevent contamination and to hold temperature at less than 4C
- inserts of line prep cooler currently 8C, only stock enough food in these inserts to be used up within 2 hours

Hot holding over 60C

Seal around sink requires replacing.

Operator purchased bleach during inspection. Fill sink with water and 3 caps of bleach. Wash dishes in dishwasher and then soak in sink with bleach solution for at least 2 minutes, air dry.

One bleach bottle in kitchen, almost empty. Fill with bleach solution and use this for wiping down counters in back kitchen prep areas. Wipe down counters frequently, between food items and between uses.

Use a bleach bottle to wipe down tables in dining area between customers.
