Observation: Still no light covers in the dishpit and food preparation areas.

You have been given over a month to correct this.
Corrective Action(s): You are to contact me immediately if you cannot correct infractions cited.

If the standard covers do not fit then use the plastic tubing for the fluorescent lights.

Remove the fluorescent bulb coils in the dishpit area and the kitchen as they cannot be adequately shielded

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: No additional multi-level wire shelves have been added to the Walk-in cooler. Instead operator is placing plastic flats that are perforated and placing foods on top.
Corrective Action(s): The plastic flats are not acceptable as it is not practical for daily cleaning purposes.

Place more multi-level wire shelves -the lowest level must be >15cm off the ground so you can clean underneath with a broom or mop.

As stated in the previous report ALL foods must be on the shelves >15cm off the ground or on moveable carts.

Observation: It has only been one month and temperature logs are already missing for the Walk-in cooler
Corrective Action(s): All fridges and dishwasher must be temperature monitored and logged -proper corrective actions must be in place when temperatures are off
