Observation: Pizza dough is being covered with garbage bags.
Corrective Action(s): Garbage bags are not considered food grade materials. Garbage bags may have chemicals which can leech into food. Discontinue the use of garbage bags immediately.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Walk-in cooler glass door (by cook line) door seal is in poor condition and needs to be repaired. Prep cooler (right side) door seal also needs to be replaced. Door seals in good working order were found to have accumulated food debris.
Corrective Action(s): Ensure door seals are maintained in good condition to prevent accumulation of food debris and to prevent loss of cold refrigeration air. Door seals which were in good condition also need to be cleaned on a regular basis.

Observation (CORRECTED DURING INSPECTION): One bottle labelled sanitized was found to have an orange surface cleaner.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing or misuse of chemicals. The orange cleaner is not a food grade chemical. Orange cleaner bottle was emptied at the time of inspection.

Comments

-Walk-in cooler was at 3C.
-Left prep cooler was at 4C (top) and 3C (bottom).
-Right prep cooler was at 3C (top) and 1C (bottom).
-Walk-in freezer was at -17C.
-Upright freezer was at -18C.
-Items for hot holding were reheated on the grill rapidly to greater than 74C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for sanitizing).
-Bar glasswasher had a final rinse of 12.5ppm iodine sanitizer (minimum 12.5ppm required for sanitizing).
-Handwash stations were easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Ensure staff use the handwash stations for handwashing and not the food prep sink.
-Quats sanitizer dispenser and spray bottles were tested at 200ppm.
-Deli slicer was found to be clean and sanitary. Staff are properly disassembling deli slicer after each use.
-Ice machine was found to be clean and well maintained. Ice scoop was stored in a sanitary manner.
-Dry ingredient scoops were properly stored in a sanitary manner.
-Raw meats were properly stored below and separately from ready-to-eat foods.
-Facility serviced by a professional pest control operator on a monthly basis. No signs of pests noted at the time of inspection.
-General sanitation satisfactory. Ensure staff pay attention to the area under the ice machine (old food debris).
-Washroom clean and sanitary
*Temperature records are not being properly completed - temperatures are not being recorded during Saturday and Sunday. Ensure weekend staff are properly checking and recording temperatures to verify equipment is functioning properly.
