Observation: Hand washing station at the dishwashing area has been decommissioned (tap handles, soap and paper towel dispensers all removed). Staff must be able to wash their hands between racking the dirty dishes and unloading the clean dishes.
Corrective Action(s): Reinstate hand washing station and remind staff of the importance of washing hands between touching dirty and clean food contact surfaces. Due: August 22, 2023

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: High temperature dishwasher in Dogwood East not working during inspection (display screen stated it was in the rinse cycle however it was not running) and could not be reset/repaired by staff on site during inspection.
Correction: Adjust/repair dishwasher and have all dishes washed in the main kitchen area until this is rectified. Due: Sept 30, 2022

Note: What is believed to be cockroach egg casings was found on the floor between the ice machine and the wall. Pest control company currently in biweekly. Notify pest control company and have them check area, send photos if possible for a confirmation of identification and provide treatment if needed.

General observations:
√ Coolers ≤4°C, Freezers ≤ -18°C, Hot holding ≥60°C
√ Good food storage practices noted such as thawing in cooler
√ Food up off floor ≥6”, good stock rotation noted
√ All other hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Quats sanitizer available at 200ppm available in buckets and spray bottles
√ High temperature dishwashers both sanitizing at ≥71°C
√ Three compartment sink stocked with dish soap, sanitizer, hot and cold running water
√ Test strips present for monitoring dishwasher/sanitizer levels
√ Equipment appeared to be in good working order
√ General sanitation and maintenance is excellent
√ Thermometers present
√ Temperature logs maintained and no issues with equipment have been noted
√ Staff with FoodSafe (or equivalent) present.
√ No concerns with staff hygiene or food handling noted during inspection
√ Permit posted in visible location
