- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quat sanitizer solution available at 200 ppm throughout. Test strips available for use.
- Three-compartment sink available for manual warewashing maintained in sanitary conditions. Sink drain plugs available.
- Walk-in cooler, sandwich prep cooler and undercounter cooler measured at 4C or colder. *Note: ensure to cover prep cooler inserts with lids during non-busy times, and ensure not to fill inserts all the way to the top (inserts should only be 1/2 full, to allow for quick turnover and to promote better air circulation).
- Walk-in freezer measured at -20C.
- Hot-held meatballs and soups measured at 60C or hotter
- Temperature logs well-maintained and up to date
- Food storage practices satisfactory. All food stored off the floor and properly covered.
- General sanitation satisfactory at time of inspection
