Observation: Rubber seals on walk-in freezer door and walk -in cooler door noted torn and not functioning properly. Frost build ups noted in the walk-in freezer shelves and on the comperessor fan grid. air temperature around -12C.
Corrective Action(s):
- Replace rubber seals on both units so that the doors on both unit can be closed properly.
- Remove ice build ups from door primeter in walk-in freezer .Ensure frost build ups around comperassor fan is cleaned.

Routine inspection

Kitchen:
- Hand washing stations are supplied with hot/cold running water, liquid soap and paper towels. Soap dispenser above 2-compartment sink is to be repaired or replaced for the next routine inspection.
- Kitchen floor observed to be generally clean and free of excessive build-ups.
- One ceiling tile observed to be out of place and a cable dangling above the food prep area. Ensure to re-install ceiling tile properly so that they protect food from falling dust and potential contamination.
- QUAT sanitizer 200-400 ppm to sanitize all food contact surfaces available in spray bottles. Wiping clothes are to be kept in sanitary condition and to be replaced maximum every 4 hrs. Obtain proper test strips to ensure right concentration for all non - rinse food safe sanitizers used.
- Ice machine found to be clean and ice scoop stored in sanitary container. Suggested to relocate ice scoop container away from laundry machine.
- No obvious sign of pest activity noted at this date. Mice traps are in place.
- Food storage practices observed to be satisfactory. Food is labeled properly and raw-cook food separation is practiced.
- 50-100 ppm CL2 detected at the final rinse of dishwasher. Liquid detergent noted. Dishwashing flow noted to be properly maintained.

Reminders:
- Some hard to reach areas under equipment observed to have build-ups and food debris. Kitchen floor is to be kept clean. Frequent cleaning and removing food debris are to be practiced.
- Food is to be stored at least 6 inch off/above the floor.
- Cleaning is to be done under the dish pit and under the counters in dishware washing room.


- Customer washrooms are clean and maintained. Staff washroom maintained

Bar:
- Floor in Bar area observed to be clean. Ice well and beer dispensers are clean and maintained.
- IODIN sanitizer 25ppm detected in final rinse in glass washer. Obtain test strips to test sanitizer daily.
- Soap and paper towel are to be supplied for second hand washing station in the bar. Ensure HW sink is unobstructed all times and staff have easy access to HW sink.

General Temperature controls:
- Food in walk-in cooler measured at or below 4C. All under counter coolers, drawer cooler and insets measured at or below 4C. Proper storage of food was discussed.
- Food in walk-in freezer measured at or below -18C.
- Cooling units temperature monitoring log kept updated. cooling units are provided with adequate thermometer. Ensure to record temperature at least twice daily.
- Food in Hot holding units measured at 60C or hotter. Soap hot holding unit measured at 60C.
