203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Two of three inserts of beef were at 10C. Beef was made the previous day. Third container of beef was at 4C.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. To allow for rapid cooling, ensure foods are placed into shallow container and the top is left slightly open to allow steam to escape. Beef was discarded at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Deli slicer sharpening guard was found to have food debris.
Corrective Action(s): Ensure slicer is properly disassembled for proper cleaning and sanitizing after each use. Remove screw at the based on the blade guard to allow for proper cleaning. Sharpening guard was cleaned and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Condensed milk was stored in an opened can.
Corrective Action(s): Ensure foods are transferred into food grade containers once they are opened.

Comments

-Walk-in cooler was at 3C.
-Front prep cooler was at 4C (top and bottom).
-Front drink dispenser was at 4C.
-Undercounter freezer was at -13C
-Hot holding cabinet and table were greater than 60C. Food items were heated to greater than 71C/74C prior to placing into hot holding units.
-Both handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff observed properly changing single use gloves when they become contaminated.
-Quats sanitizer pail tested at 200ppm. Sanitizing solution is changed every 2hrs and sanitizer dispenser was at 200ppm.
-Raw meats were stored below ready-to-eat foods.
-General sanitation good at the time of inspection (additional attention required to door seals in prep cooler)
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
*Ensure bottles of oil (and any spray bottles) are properly labelled.
-Operator had valid FoodSafe Level 1 - valid until March 11, 2022.
