Observation: 1. Gravy containers are not being washed and sanitized between batches.
2. Inside of coolers were full of spilled oil and food debris.
Correction: 1. Must wash and sanitize gravy inserts after each use. Purchase more inserts to allow for easier turn over with inserts.
2. Clean inside of coolers to remove grease and food debris.

- Food was store 6" off of the floor and containers were all covered
- Gravy containers have been cleaned, continue to wash and sanitized every night
- New drying racks have been purchased to replace the broken and dirty ones
- Seats have been reduced to accommodate small dishwashing facilities.
- Temperature records are now being recorded.
